Pepitas come from a specific type of squash known as the “oil seed pumpkin”. Instead of the hard white seed shell, these pumpkin seeds have a very delicate, papery shell that comes off easily. Pepitas themselves are flat, oval-shaped, green seeds with a pointy end.
Pepitas are loaded with nutrition. Just 1/4 cup (32.25g) provides significant amounts of manganese, tryptophan, magnesium, phosphorus, copper, protein, zinc, and iron. Many studies suggest that pumpkin seeds may promote prostate health, protect our bones, act as an anti-inflammatory, and lower cholesterol.
In addition to their medicinal properties, pepitas are an excellent addition to many salads, soups, and creams.
